Cookies

Since my boss wanted cookies for his birthday I device to see what I could do. He has recently decided to go gluten free, and has type 2 diabetes. Needless to say, I took the challenge. Here is my fun recipe. 
1/2 C butter
2/3 C white sugar
2/3 C agave nectar
2 eggs
4 tsp vanilla
1 tsp baking soda
1 C almond butter
3 C oats
Preheat oven 350°F. Cream butter and sugar. Add agave and continue to cream together. Add the eggs, vanilla, and baking soda. Continue creaming. The eggs are a binding agent here so the more they are crammed the better they will hold stuff together. Add the almond butter and oats. Put on cookie sheet and bake until browned.
They puffed up really big in the oven then fell. I'm still baking them and added a bit of gum to the second batch as the first spread out a lot. Apparently almond butter doesn't bind quite as well as peanut butter.
On other notes, A tried to paint her tongue blue with kids crest tonight. She won't be doing that again soon. She has mellowed out after moving up at her current school. G tries to creep these days and will pull up on anything. Everyone at the school says he's really advanced... This works me because clearly they haven't dealt with kids on the early end of the spectrum. There is a 14 month old who can barely stand though and that seems more normal to them...
